Lisiecka sausage – regional product


In the 1930s local butchers based in Czernichów and Liszki areas began to make their special sausage (lisiecka). In the post-war years, the Samopomoc Chłopska Municipal Cooperative in Liszki and many individual butchers continued this tradition. Thanks to this, a traditional recipe has survived, and today lisiecka sausage tastes exactly the same as over 80 years ago. The Consortium of Lisecka Sausage Producers bringing together sausage producers from Czernichów and Liszki communes was set up to protect the traditional recipe. In October 2010, the EU entered lisiecka sausage on its list of Protected Geographical Indication products. This means that the production process may take place only in the said communities. The sausage is made exclusively from pork meat. Three additions are used during the production process to ensure the product’s subtle, pepper-garlic flavour. In addition to meat, salt, coarsely ground pepper and fresh garlic in carefully selected proportions are the secrets of the sausage’s unique taste.
